Chicken Zucchini Poppers
Chicken zucchini poppers are bite-sized snacks made with ground chicken and shredded zucchini. They are seasoned with herbs and spices, baked until crispy, and perfect for a healthy and delicious appetizer or snack.

- 1 lb Ground Chicken
- 2 Medium Zucchini Squash – Grated
- 2 Garlic Cloves, Minced
- 2 Tbsp. Fresh Chives, Chopped
- 1/2 Tsp. Kosher Salt
- ¼ Tsp. Fresh Black Pepper
- 2 Tsp. Olive Oil
Preparation
Step 1
In a mixing bowl, combine the ground chicken, grated zucchini, minced garlic, chopped chives, kosher salt, and black pepper. Mix well to combine.
Step 2
Using a tablespoon or cookie scoop, form the chicken mixture into small balls or patties.
Step 3
In a large skillet over medium-high heat, heat the olive oil.
Step 4
Add the chicken poppers to the skillet and cook for 3-4 minutes on each side, until browned.
Step 5
Transfer the browned chicken poppers to the lined baking sheet and bake in the preheated oven to 400°F for 10-12 minutes, or until cooked through.
Step 6
Once cooked, remove the chicken poppers from the oven and let them rest for a few minutes before serving.
