Crispy Roasted Mushrooms

Crispy  Roasted Mushrooms are a delicious and healthy side dish that are easy to make. These mushrooms are seasoned with herbs and spices and roasted to a crispy texture, making them a flavorful and nutritious addition to any meal.

Allowed for Ideal Protein phases 1 to 3.

  • 2 Cups Mixed Mushrooms, Roughly Chopped
  • 2 Cups Button Mushrooms, Halved or Quartered if Large
  • 1 Tblspn Olive Oil
  • 2 Fresh Thyme Sprigs
  • To taste Kosher Salt and Black Pepper

Preparation

Step 1

Preheat your oven to 400°F.

Step 2

In a large bowl, toss the chopped mushrooms with olive oil, thyme, salt, and black pepper.

Step 3

Spread the mushrooms out in a single layer on a baking sheet.

Step 4

Roast the mushrooms for 20-25 minutes, stirring once or twice, until they are crispy and browned on the edges.

Step 5

Remove the mushrooms from the oven and let them cool for a few minutes before serving.
