Ingredients
- 1 large English cucumber – peeled, seeded, and diced (about 2 cups diced)
- 2/3 cup red onions – diced
- 2 Roma tomatoes – seeded and diced
- 1 Jalapeno – seeded and diced
- 1 heaping tsp. fresh garlic – minced
- 1 tbsp. olive oil
- 1 – 1/2 tbsp. fresh lime juice
- 1/4 tsp. ground cumin
- 1/2 tsp. kosher salt
- 1/2 tsp. black pepper – freshly ground
- 1 tbsp. fresh cilantro – chopped
- Ideal Protein Dorados or Jalapeno Cheddar Crisps (to serve with)
