Ingredients

  • 1 large English cucumber – peeled, seeded, and diced (about 2 cups diced)
  • 2/3 cup red onions – diced
  • 2 Roma tomatoes – seeded and diced
  • 1 Jalapeno – seeded and diced
  • 1 heaping tsp. fresh garlic – minced
  • 1 tbsp. olive oil
  • 1 – 1/2 tbsp. fresh lime juice
  • 1/4 tsp. ground cumin
  • 1/2 tsp. kosher salt
  • 1/2 tsp. black pepper – freshly ground
  • 1 tbsp. fresh cilantro – chopped
  • Ideal Protein Dorados or Jalapeno Cheddar Crisps (to serve with)

Preparation

Step 1

Place all ingredients in a medium bowl and stir to coat evenly.
