Foil Pack Shrimp With Broccoli is a healthy and flavorful dish made with tender baked shrimp and crispy roasted broccoli. This easy-to-make recipe is perfect for a quick weeknight dinner or a meal prep option.

  • 1 lb. Medium Raw Shrimp, Peeled And Deveined
  • 2 Tbsp. Olive Oil
  • 1 Tbsp. Garlic, Minced
  • 1 Tsp. Italian Seasoning
  • ¼ Tsp. Onion Powder
  • 2 Tbsp. Vegetable Or Chicken Stock, Divided
  • To Taste. Salt And Pepper
  • ¼ Tsp. Smoked Paprika
  • Pinch Red Chili Pepper Flakes (Optional)
  • ½ Broccoli Head, Broken Into Florets
  • 1 Fresh Chopped Parsley for garnish

Preparation

Step 1

Preheat the oven to 375°F.

Step 2

Cut four 12×18-inch pieces of aluminum foil and set aside.

Step 3

In a mixing bowl, combine the shrimp, olive oil, garlic, Italian seasoning, onion powder, 1 tbsp. of stock, salt, pepper, smoked paprika, and red chili pepper flakes (if using). Mix well.

Step 4

Place the broccoli florets on one half of each aluminum foil sheet.

Step 5

Spoon the shrimp mixture over the broccoli.

Step 6

Pour the remaining 1 tbsp. of stock over the shrimp and broccoli.

Step 7

Fold the other half of the foil over the top of the shrimp and broccoli. Roll up the edges to create a sealed packet.

Step 8

Place the packets on a baking sheet and bake in the preheated oven for 15 minutes or until the shrimp are pink and cooked through.

Step 9

Carefully unwrap the baked shrimp and broccoli foil packets then garnish with fresh parsley and a slice of lemon (optional).
