Green Chicken Zoodle Bowl

Green Chicken Zoodle Bowl is a flavorful and healthy dish that combines tender chicken, spiralized zucchini noodles (zoodles), and a variety of nutrient-rich green vegetables. The dish is a great way to enjoy a low-carb and gluten-free meal, packed with protein and essential vitamins and minerals. It’s perfect for a light lunch or dinner.

  • ⅓ cup cilantro – packed
  • 1/2 cup olive oil
  • 2 tbsp. lime juice
  • ¼ tsp. sea salt
  • 1 clove garlic
  • ½ cup green onion bulbs – diced
  • 3 cloves garlic – minced
  • 1 pound boneless chicken breast – cut into 1½ inch chunks
  • 2 zucchini – spiralized
  • ½ tsp. sea salt
  • For garnish – cilantro leaves, lime wedges, and avocado (maintenace)


Step 1

Preheat the oven to 425°F. First, make the sauce by placing cilantro, oil (aside from one table spoon), lime juice, sea salt in a blender and blend until thoroughly combined. Set it aside.

Step 2

On medium heat, put remaining tablespoon of oil in the bottom of an ovenproof skillet with onion bulbs and  garlic, cook  until fragrant.

Step 3

Turn the heat to high and add the chicken in the pan and spread out so that the chicken is in a thin layer.

Step 4

Let cook for 1-2 minutes without stirring, so the bottom of the chicken browns. Give a good stirring and place in the oven. Cook for 12 minutes or until cooked throughout.

Step 5

While the chicken is cooking, place the zoodles in a mixing bowl and toss with the dressing. Set aside.

Step 6

Once the chicken is finished cooking, let cool off for a few minutes. Add with the vegetables and dressing.

Step 7

Garnish and serve.
