Ham, Egg, and Spinach Roll-Ups

Ham, Egg, and Spinach Roll-Ups are a protein-packed and easy-to-make breakfast or quick lunch option. These roll-ups are made with sliced ham, scrambled eggs, and spinach, making it a healthy and delicious meal that can be enjoyed on-the-go.

Allowed for Ideal Protein phases 1 to 3.

Ingredients

  • 2 tsp. Olive Oil
  • 2 Spinach – Raw
  • 2 Tomatoes
  • Salt and Pepper – to taste
  • 3 Eggs
  • 6 Sliced nitrate and additive-free ham

Preparation

Step 1

Preheat the oven to 375°F.

Step 2

Chop the spinach and tomato into cubes.

Step 3

In a mixing bowl, whisk together the eggs, chopped spinach, and tomatoes. Season with salt and pepper.

Step 4

Heat the olive oil in a skillet over medium heat. Add the egg mixture and stirring occasionally, until the eggs are scrambled and fully cooked. Remove from heat.

Step 5

Lay the slices of ham and nitrate out on a flat surface. Spoon the scrambled eggs onto each slice of ham.

Step 6

Roll up each slice of ham and place seam side down on a baking sheet.

Step 7

Bake for 10-12 minutes, until the ham is slightly crispy.

Step 8

Serve hot and enjoy!
