Low Carb Turkey Pesto Roll Up is a delicious and healthy snack or meal option, featuring sliced turkey wrapped around pesto for a flavorful and low-carb treat.

Allowed for Ideal Protein phases 1 to 3.

Ingredients

  • 1 Cucumber (5-6 Long Slices)
  • 2 oz. Deli Turkey (Nitrate and Additive Free)
  • 1 oz. Cheddar Cheese for Maintenance
  • 1 tbsp. Arugula Pesto
  • 1 Red Bell Pepper, Sliced Into Matchsticks
  • 1 Baby Spinach or Mixed Greens
  • Salt and Pepper To Taste

Preparation

Step 1

Lay the cucumber slices flat on a clean surface.

Step 2

Spread a thin layer of arugula pesto on each cucumber slice.

Step 3

Place a slice of deli turkey on top of the pesto-covered cucumber slice.

Step 4

Add a few slices of red bell pepper on top of the turkey.

Step 5

Layer some baby spinach or mixed greens on top of the bell pepper.

Step 6

If desired, add a slice of cheddar cheese on top of the greens (maintenance)

Step 7

Season with a pinch of salt and pepper.

Step 8

Starting from one end, carefully roll up the cucumber slice with the filling inside, forming a tight roll.

Step 9

Repeat the process with the remaining cucumber slices and filling ingredients.
