Ingredients

  • 1 lb Chicken breast (2-inch cubes)
  • 2 cups Broccoli florets
  • 1 cups Baby Bella mushrooms (quartered)
  • 2 cups red bell pepper (1-inch chunks)
  • 1 cup Zucchini (1-inch chunks)
  • 1 tablespoon approved oil
  • 1/2 teaspoon Black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon Garlic powder

Preparation

Step 1

Preheat the oven to 475°F

Step 2

Prep all of your chicken and veggies

Step 3

Set them on a large sheet pan or two small sheet pans

Step 4

In a small bowl add the oil and spices

Step 5

Whisk together

Step 6

Pour the oil mixture over the chicken and veggies on the sheet pan and mix

Step 7

Layout in a single layer

Step 8

Bake in the preheated oven for 18 minutes or until done

For meal prep: divide into 3 bowls with lids and store in the fridge
