Turkey Sandwich on Pickle Buns

Crunchy, tangy, and totally bunless — this pickle-powered turkey sandwich is low-carb, high-flavor lunch done right!

Allowed for Ideal Protein phases 1 to 3.

Ingredients

  • 1 Large Deli-style Dill Pickle
  • ½ tbsp. Mayonnaise
  • ½ tsp. Yellow Mustard
  • 4 oz. Turkey, Deli-sliced
  • 2 Fresh Tomatoes, Sliced
  • 2 oz. Iceberg Lettuce
  • ¼ cup Red Onion, Sliced
  • Salt and Pepper, to taste

Preparation

Step 1

Slice the pickle in half lengthwise to create a “bun.” If needed, scoop out a bit of the center to make room for fillings.

Step 2

In a small bowl, mix mayonnaise and mustard together.

Step 3

Spread the mayo-mustard mixture on the inside of each pickle half.

Step 4

Layer the turkey, tomato slices, lettuce, and red onion between the pickle halves.

Step 5

Season with salt and pepper to taste.

Step 6

Close the sandwich with the top pickle half and serve immediately. Enjoy!
