Salmon Bites

Ingredients
- 12–16 ounces of salmon filet
- ½ tsp garlic salt
- ½ tsp pepper
- 2 tsp olive oil
- ½ cup green onion sliced thin
- ½ cup red pepper diced
- 1 packet Ideal Protein chips breadcrumbs (jalapeno
recommended) - 2 large eggs lightly beaten
- 2 tbsp whole food mayo
- 2 tsp soy seasoning
- 1 garlic clove minced
- ¼ cup fresh parsley minced
- 1 tbsp fresh dill chopped – or 1tsp dried
- ¼ tsp salt
- ½ tsp pepper
- 1 tsp paprika
Preparation
Step 1
Preheat oven to 400°F – 425°F
Step 2
Pat dry salmon filets
Step 3
Place them on a parchment-lined baking sheet
Step 4
Sprinkle some garlic salt and pepper
Step 5
Bake uncovered for 10-15 minutes
Step 6
A thinner filet will cook faster
Step 7
Remove from oven and cover with foil
Step 8
Let the filets rest and cool for 15 minutes.
Step 9
Add 2 tsp olive oil, onion, and red pepper in a skillet
Step 10
Sauté until soft and golden

Remove from heat

In a large bowl, flake in the cool salmon, sautéed onion and pepper, Ideal Protein chips breadcrumbs, mayo, eggs, soy seasoning, minced garlic, salt, pepper, paprika, dill, and parsley

Stir well to combine

Shape into 1.5 inches wide and 1 inch thick bites

Cook the salmon bites in a nonstick skillet over medium heat for 3 to 4 minutes on each side.
