Sheet Pan Fajita Shrimp and Peppers

Ingredients

  • 1 lb. Shrimp (Peeled, Cleaned, and Deveined)
  • 1 Red Bell Pepper, (Cut Into Strips)
  • 1 Yellow Bell Pepper, (Cut Into Strips)
  • 1 Green Bell Pepper, (Cut Into Strips)
  • 1 tbsp. Olive Oil
  • 2 tsp. Cumin
  • 1 tsp. Sweet Paprika
  • ½ tsp. Cayenne Pepper
  • ½ tsp. Salt
  • ½ tsp. Black Pepper
  • 2 Garlic Cloves, Minced
  • Juice of One Lime
  • Small Bunch of Fresh Cilantro

Preparation

Step 1

Preheat the oven to 400°F (200°C).

Step 2

In a large bowl, mix the shrimp, bell peppers, olive oil, cumin, paprika, cayenne, salt, black pepper, and minced garlic. Toss well to coat everything evenly.

Step 3

Arrange the shrimp and peppers in a single layer on a large baking sheet.

Step 4

Roast in the oven for 8-10 minutes, or until the shrimp are pink and cooked through.

Step 5

Serve with drizzle of fresh lime juice and sprinkle with chopped cilantro.
