  • 1 lb. Ground Turkey
  • 4 Leeks (chopped)
  • 1 Capsicum (cut into pieces)
  • 15 oz. Tomatoes (diced)
  • 5 cups Chicken Stock
  • 1 ½ cups Cauliflower (minced)
  • 4 cups Kale (ribs removed, leaves coarsely chopped)
  • 2 tbsp. Olive Oil
  • Sea Salt
  • Black Pepper (freshly ground)

Preparation

Step 1

Melt the oil in a saucepan over medium-high heat.

Step 2

Add the shallots, cauliflower, and Capsicum.

Step 3

Stir frequently and cook the vegetables until they become slightly soft, approximately 8 to 10 minutes.

Step 4

Put the turkey with the vegetables and cook until the turkey is ready, about 6 to 8 minutes. Keep stirring occasionally.

Step 5

Pour in the chicken stock and diced tomatoes and season with salt and pepper to your desired taste.
