            Chicken Fritters

  • 5 oz. Ground Chicken
  • 1 Egg
  • ¼ Cup Zucchini, Finely Grated and Squeezed Dry
  • 1 tbsp. Gluten-free Breadcrumbs
  • 1 tbsp. Fresh Dill, chopped
  • 1 tbsp. Fresh Parsley, chopped
  • 1 tbsp. Green Onion Tops, sliced
  • ½ tsp. Lemon Zest
  • Salt and Pepper

            Chive Sauce

  • ¼ Cup Lactose-free Plain Greek Yogurt
  • 1 tsp. Dijon Mustard
  • 1 tsp. Fresh Lemon Juice
  • 1 tbsp. Fresh Chives, finely chopped
  • ½ tsp. Garlic-infused Olive Oil
  • Salt and Freshly Ground Black Pepper, to Taste

Preparation

Step 1

Place grated zucchini in a clean towel and squeeze out excess moisture.

Step 2

In a bowl, combine ground chicken, egg, zucchini, breadcrumbs, dill, parsley, green onion tops, lemon zest, salt, and pepper.
