Ingredients

  • 1 Medium Green Bell Pepper
  • 5 oz. Ground Chicken
  • ¼ Cup Cooked White Rice
  • 2 tbsps. Grated Parmesan Cheese
  • 2 tbsps. Lactose-free Mozzarella Cheese, shredded
  • 2 tbsps. Sliced Green Onion Tops
  • 1 tbsp. Chopped Fresh Parsley
  • ½ tsp. Dried Italian Seasoning
  • ½ tsp. Garlic-infused Olive Oil
  • Salt and Black Pepper, to Taste
  • 2 tbsps. Low-fodmap Marinara Sauce

Preparation

Step 1

Preheat oven to 400°F.

Step 2

Cut the green bell pepper in half lengthwise and remove the seeds and membranes.

Step 3

Place the pepper halves cut-side up in a small baking dish.

Step 4

Heat the garlic-infused olive oil in a skillet over medium heat.

Step 5

Add the ground chicken and cook for 5–6 minutes, breaking it apart as it cooks, until fully cooked.
