These steak and vegetable roll-ups are a hearty, SIBO-friendly main dish packed with lean protein and colorful vegetables. Tender flank steak is rolled around fresh spinach, zucchini ribbons, and roasted red peppers, then brushed with a fragrant garlic-infused herb oil before baking.

Ingredients

  • 1½ lbs Flank Steak, Thinly Sliced Into 8 Strips
  • 1 Zucchini, Cut Into Ribbons
  • 2 cups Fresh Spinach
  • 1 roasted Red Bell Pepper, Sliced
  • 2 tbsp Garlic-infused Olive Oil
  • 1 tbsp Fresh Parsley, Chopped
  • 1 tbsp Fresh Basil, Chopped
  • Salt and Pepper

Preparation

Step 1

Preheat oven to 400°F (200°C).

Step 2

Season the steak with salt and pepper.

Step 3

Fill each steak strip with zucchini, spinach, and roasted red pepper.

Step 4

Roll tightly and place seam-side down in a baking dish.

Step 5

Mix garlic-infused olive oil with parsley and basil, then brush over the roll-ups.

Step 6

Bake for 18–22 minutes until cooked to your liking.
