Ingredients

  • 1½ Cups Certified Gluten-free Oat Flour
  • 1 tsp. Baking Powder
  • ½ tsp. Ground Cinnamon
  • ¼ tsp. Salt
  • 2 Large Eggs
  • ½ Cup Lactose-free Milk
  • ¼ Cup Light Brown Sugar
  • 1 tsp. Pure Vanilla Extract
  • ¾ Cup Finely Grated Carrots
  • 2 tbsp. Chopped Pecans (Optional)

Preparation

Step 1

Preheat the oven to 350°F (175°C). Line a 6-cup muffin tin with paper liners or lightly grease each cup.

Step 2

In a large mixing bowl, whisk together the oat flour, baking powder, cinnamon, and salt until well combined.

Step 3

In a separate bowl, whisk the eggs, lactose-free milk, brown sugar, and vanilla extract until the sugar has dissolved and the mixture is smooth.

Step 4
