Chayote and Zucchini Squash Salad

Chayote and Zucchini Squash Salad is a refreshing and healthy salad made with thinly sliced chayote and zucchini squash, red onions, and a tangy vinaigrette dressing. This easy-to-make salad is perfect as a light side dish or a vegetarian main course.

  • 3 Chayotes
  • 3 Small Zucchinis
  • 3 Limes
  • 1 Tsp. Salt

Preparation

Step 1

Cut the chayotes in half lengthwise and the zucchini sliced thinly.

Step 2

Bring a pot of salted water to a boil.

Step 3

Add the chayote slices to the boiling water and cook for 5 minutes.

Step 4

After 5 minutes, add the zucchini slices to the pot and cook for an additional 2 minutes.

Step 5

Drain the vegetables and let them cool.

Step 6

In a large bowl, mix the cooled chayote, zucchini thinly sliced with salt, and juice of lime.

Step 7

Serve as a salad or side dish.
