Chili eggplant is a superb recipe to spice up your meal plan. It’s low-carb, easy to prepare, and your whole family can enjoy it.
Approved for all Ideal Protein phases. Go ahead and plate it right away with some Cauliflower Fried Rice.
- 1 large eggplant
- 1/2 red onion – finely chopped
- 1 fresh long chili, sliced long and thinly
- 1 tbsp. lemon thyme leaves
- 1 tbsp. extra virgin olive oil
- 1 tbsp. lemon juice
- 1 tsp. ground sumac
Preheat oven to 350°F
Pierce the eggplant with a fork and place it on an oven tray
Bake for 30 minutes or until it’s tender
Once cool enough, peel and chop coarsely
Place in a bowl and season with red onion, chili, lemon thyme leaves
In another bowl, mix together olive oil, lemon juice, ground sumac, and pour over the eggplant mix
Toss and combine well
Serve and enjoy!
