Garlic Shrimp and Veggie Foil Packs

Ingredients
- 1 lb. large shrimp – peeled and deveined
- 3-4 cups chopped zucchini or your favorite vegetables
- 4 cloves garlic – minced
- 2 tbsp. cilantro or parsley – minced
- 1 tbsp. olive oil
- 1 tsp. paprika
- Salt and pepper to taste
Preparation
Step 1
Add all the ingredients to a large bowl and mix well to combine.
Step 2
Place four 18×12-inch pieces of heavy aluminum foil on the counter and place the shrimp and veggie mixture on the foil.
Step 3
Fold the foil over the shrimp to seal properly.
Step 4
Grill or bake at 400°F for 15-20 minutes or until shrimp and vegetables are cooked through.
Step 5
Serve with Cauliflower rice or salad.
