  • 1 pound zucchini
  • 1 pound yellow Squash
  • 3 cups arugula
  • 1 cup fresh flat-leaf parsley leaves
  • 2 tbsp. fresh lemon juice
  • 1 ½ tbsp. virgin olive oil
  • Salt and pepper to taste


Step 1

Zucchini and Yellow Squash Cut into thin ribbon-like strips using a vegetable cutter.

Step 2

Combine sliced zucchini and squash with arugula and parsley leaves in a mixing bowl.
